Fresh Start Smoothie

Who knows where the time goes...
It's the new year, the holidays are a complete blur, and I'm so ridiculously happy to be back at AtV with lots of change under my belt. 
Currently I'm sitting at the bar/kitchen counter in my new home, while Mr AtV assembles a bathroom shelf and Nat King Cole serenades us (and the pups) in the background. If there's one thing I've learned over the last few very hectic months it's that every day offers a fresh new beginning. Sure, the new year is a great time to reflect and set goals, but the gift of every new day should be celebrated just as much, if not more than ringing in another year. 
Today I made my very first AtV recipe in my new surroundings, and in keeping with the theme of things I wanted it to be fresh and nurturing. With many good things on the horizon, but most importantly the promise of new day, I'd like to raise my giant mason jar of green smoothie and toast to every single one of you. 
Fresh Start Smoothie
Makes 6 liquid cups
  • 2 c packed Spinach Leaves
  • 1.5 c chopped Banana
  • 1.5 c Apple (I used Fuji)
  • 1.5 c chopped Cucumber
  • 3 to 4 whole Medjool Dates (don't forget to remove the pits)
  • 1/4 c Lemon or Lime Juice
  • 1/4 c packed Mint Leaves (optional)
  • 2 and 1/4 cups Water
Puree everything together until evenly blended.
For optimum enjoyment drink this smoothie with someone you love and/or in your favorite place with a pretty view.
