Monday, Monday...

The weekend away was lovey, relaxing and just what Mr. AtV and I needed. Unfortunately I have about a million things to catch up on, and I don't want to do any of it! As Elmer sits at my feet waiting patiently to be taken on a walk, I'm hoping this big mug of sun tea will help muster up some motivation...
I hope you'll accept some photos from our getaway, instead of a recipe today. I promise to be back on Wednesday with something tasty and sprouted!

Mango Kombucha!
Late-day shot of Spirulina. In a small jar mix 1 tsp Spirulina with 4 to 6 oz water. Shake/stir and drink immediately. I usually have this one to two times a day. 
Snack platter: Carrots and Cucumbers with Ranch Dressing.
One of my breakfast fruit bowls - I think I ate this three times! Bananas, Strawberries, and fresh squeezed Orange juice.
On our way to see a lighthouse and hopefully spot some migrating whales along the coastline!
No whales in sight, but the gorgeous weather and stunning views made up for it!
After the lighthouse trip we headed back to the cottage to drop off the dogs (and I did a quick outfit change) and head back out for some lunch...

Romaine Salad with sprouted lentils, and Savory Pumpkin/Flax Onion Crackers with chopped carrot and sprouted lentils, and a generous dollop of Creamy Cucumber Dressing.

    1. Thanks, Chicky! In all of the times we've been to the Mendo-coast this was my first visit to LL! I'm definitely working them into my schedule for all future visits!

  3. Gorgeous photos! Looks like some beautiful weather. I could totally go for a huge bowl of fruit and a kombucha right now too.
    You are super brave for taking the spirulina straight! I usually have to mix it with juice.

      I don't know why, but there's something about the flavor of straight spirulina that I just love! It's like some sort of bizarre comfort food.
