This spectacular bowl of food came together like a beautiful sappy melody. At first bite I was head over heels, and thankfully I have leftovers for dinner tonight! Best of all this is a ridiculously simple dish, and it's very filling too.
But first you'll want to have a couple of AtV Staple recipes on hand:

Just because this is a salad doesn't mean you have to eat it cold. Depending on what season you're currently in, this can be eaten as a warm dish just as easily as it can be eaten chilled.
Spread your salad evenly out onto a dehydrator sheet or parchment lined pan. Proceed to warm in your dehydrator, or oven set at the lowest heat (leaving the oven door cracked open) for roughly 15 to 20 minutes.

The best part is that shes's talking about cooked lentils, not sprouted -- which contain even more nutrients! Just ignore that last part about adding meat to your lentils (snicker).
Salad first...

Lentil Salad Components
Make this as large or as small as you'd like depending on how many people you'll be serving.
In the end the measurements are completely up to you, but here's what should go into the bowl:
Sprouted Lentils (I used the French Green variety) - or if you're not a raw foodie you can also do cooked lentils
Cucumber thinly sliced/chopped
Cherry Bomb Peppers (be careful, those seeds are HOT!) //or// Red Bell Pepper
Sweet Cherry Tomatoes sliced in half
Avocado
Green Onion
Fresh Cilantro
Everything into a bowl and toss with a dash of Salt and Pepper!
Don't forget to make the dressing - it's the secret star of this dish!
Have you ever tried a Curry Salad Dressing with fresh orange juice?
Step 2.
Creamy Curry Sweet Chili Dressing
Makes enough for roughly 2 servings
In a small mixing bowl combine the following:
5 Tbsp of either AtV Mayo //or// AtV Sour Cream
3 Tbsp AtV Sweet Chili Sauce
1 tsp Date Paste (optional - for more sweetness)
4 Tbsp fresh Orange Juice
1/4 tsp Curry Powder
Salt to Taste
Whisk everything together evenly.
Important Note:
Let your Dressing sit/chill in the fridge for at least 15 minutes -- this is very important for the flavors to develop properly!
The only thing left to do from here is eat your salad!
Apologies for the less than sub-par photos. It's currently raining cats and dogs, and I didn't feel like crossing our flooded back yard (with an armful of Lentil salad) to take photos in my lighting box that's conveniently located in the garage. I'm not complaining though, I love this stormy time of year!

Deletemade an awesome little salad for lunch today as well: fine chopped broccoli with Delicious apple and some walnuts. Dressing of olive oil, minced garlic, minced ginger. NOM.
ReplyDeleteOhh, that sounds really tasty! I love Broccoli with walnuts. Those two ingredients also go great with fresh Raspberries :)
