Barbecue Portabella Salad with Creamy Sweet Mustard Dressing

Sometimes a simple week of food is exactly what I need, and that's where smoothies and salads fit in perfectly. The trick (or challenge) is how to make a salad exciting? I can have a plate of veggies any day, but when I'm having a salad as a meal I want to be dreaming about that salad all day, until I finally get to sink my teeth into it for lunch or dinner.
Today's post isn't really a "recipe", but more of a concept in making a really tasty salad with an amazing star ingredient.
So lets have a salad!
Barbecue Portabella Salad on a bed of Sprouts
Makes 1 large salad or 2 generous sides
Step 1.
Beforehand Prep
This Salad calls for two special ingredients:
BBQ Spice Mix (click to find the recipe in this post)
AtV Sour Cream (click to read more)
Step 2.
Making the Barbecue rubbed Portabella
After you've Made your BBQ Spice Mix proceed to make the Barbecue rubbed Portabella Mushroom found at Step 2 of this recipe post

Step 3.
Creamy Sweet Mustard Dressing
In a small mixing bowl combine:
2 heaping Tbsp AtV Sour Cream
2 heaping Tbsp Mustard (your choice)
1 heaping Tbsp Date Paste
1/3 C Water
Salt and Pepper to taste
Whisk/Mix together evenly

Final Step 
Making Your Salad
On a bed of  Sprouts (my salad contained 2 packed cups) plate your Salad:
From Front to back:
1 Barbecue rubbed Portabella
1/2 c Red Bell Pepper
1/2 cup packed Arugula
Avocado
1/2 c Crookneck Squash
1/2 c shredded Carrot
Now that's what I call a salad!
