Cream Stuffed Cookies!

This is really less of a recipe and more of a "what can do with these leftovers?" post. Perfect for mid-week munching and unexpected guests.
In spite of my very tiny sweet tooth I seem to be creating a lot of sweets as of late, and I'm also working on another iced (or hot) holiday beverage. I blame this solely on those of you who have requested more treats! Don't worry - I'm not complaining, and neither is anyone that comes into my house and gets these treats served to them.
It's so simple, you won't believe it. All you need is about a dozen or more of one of the following cookies (I say a dozen because that's roughly how many I had leftover and works well with one batch of Cream):
No Bake Brown Sugar Cookies (click for recipe)
Coconut-Lemon Meltaways (click for recipe)
Orange Pumpkin Spice Cookies (click for recipe)
Then you'll need a batch of:
Vanilla Ginger Whipped Cream (click for recipe)
Assembly:
All of the above cookies are fairly similar in texture - with the exception of the Lemon-Coconut Meltaways, which are a tad bit crumbly.
I had leftover Orange Pumpkin Spice Cookies, and BOY did they ever go well with the Vanilla Ginger Whipped Cream. What a wonderful pairing!
Flatten out your cookie to about 1/4''
Each cookie will make roughly 1 small sandwich with some access cookie dough - which you can gather together, set aside, and use to make another sandwich (or two).
Find something cute to cut your cookies with. In my case I used the top of an old spice jar - it was perfect!
Place some of your chilled Vanilla Ginger Whipped Cream into a piping bag, or a small sandwich baggy with the end cut off.
(Impressed with my sloppy piping job?)
Each cookie should get roughly 1 rounded Tbsp of Whipped Cream, more if you prefer.
Just look at how cute they are!!
I really hope you make these, or get inspired to make you own version. They're guaranteed to be a hit at any Holiday Party this year!
