I'm not gonna lie - I had no plan for today's post...
That is, until Katy-Rose over at Addicted to Veggies facebook page requested to see Blueberries included in the recipe. That was a lifesaver if I ever needed one. Blueberry Ice-cream
This icecream can be made and eaten immediately for a more "soft serve" type of texture, OR you can follow the freezing directions for a firm Ice-cream texture.
Recipe yields roughly 4 small servings.

2 c Frozen Blueberries (berries MUST be frozen, do not use un-frozen)
1 c AtV Sour Cream
1/2 c Date Paste
1 tsp Vanilla
Puree the above in food processor until creamy:
Freezing Directions:
In a shallow Glass or Metal Dish proceed with the following steps:
Spread your Ice-cream mixture evenly into your dish like so -
Place your ice-cream uncovered into your freezer -
-- Let your ice-cream sit in the freezer for 1 hour
-- Remove Ice-cream from freezer after 1 hour
-- Stir your ice-cream thoroughly (this insures even freezing)
--Smooth out your ice-cream
-- Place ice-cream BACK into the freezer for 1 more hour
Your Ice-cream should be nice and firm after the 2nd hour. If not then you can stir it again and place it back in the freezer for another 30 minutes to 1 hour.
And there you go! Easy Ice-cream without the ice-cream maker.
Important Storage Note: If you don't plan on eating all of this ice-cream at once (I won't judge if you do!) then simply place it back in your freezer with a lid on the the container. Remove the Ice-cream when you're ready to it, place desired portion amount into your Food Processor and puree to soften it (because it will be fairly hard when thoroughly frozen).
This recipe also makes a lovely Blueberry pudding if you don't want to freeze it. Pair it with Granola or chopped fruit for tasty dessert anytime of the day.

Blueberry ice cream sounds heavenly... Do you think bananas would be as good of a sweetener as dates?

ReplyDeleteBananas will work as a sub for the dates - however it won't get your ice-cream nearly as sweet. If lack of sweetness doesn't bother you then go for it!

ReplyDeleteI made this and it tasted alittle like apple cider vinegar, did I mess up my sour cream portion? I felt like I followed the measurements, do you have any suggestions? Or Can I lessen the vinegar in my sour cream next time? Your site is awesome!
